This salad comes from Nieder-Erlenbach, Germany (my hometown), located on the outskirts of Frankfurt. Frankfurt is known for one of the largest airports in Germany and in the airport restaurant they serve a potato salad with a bratwurst that is worth while eating.

Pineapple Pecan Upside-Down Cake

If you wish, substitute other varieties of fruit for the pineapple rings. I've used peach halves or sliced peaches, chunk pineapple, apricot halves, even fresh fruit such as peeled, thick slices of cooking apples that have been sautéed or poached until just tender. Different fruit toppings change the flavor appreciably.
