WVIZ/PBS ideastream®: Baked Chicken Rolls

Baked Chicken Rolls

Ingredients
5-6 chicken breasts
8 ounces cream, feta or goat cheese
1 ½ cups diced roasted red peppers
5-6 slices of Bavarian (or other deli style) ham
1 small bunch of spinach
2 cups of seasoned breadcrumbs
1 egg beaten
2 tablespoons water
Directions
Preheat oven to 375 degrees or can be prepared ahead of time. Butterfly cut breast on the thick side, flatten to ½ inch. Layer with cheese (spread to within ½” of edge), spinach, 2 tablespoons roasted red peppers, 1 slice ham. Roll breast. Dip breast in egg/water mixture, roll in breadcrumbs coating evenly.
Place seam side down in greased 9 x 13 baking dish. Bake at 375 degrees for 30-45 minutes or until chicken is completely cooked. Serve with rice pilaf and fresh steamed green beans.
